What the Authentic Wagyu label requires

The certification specification indicates that carcasses must meet genotypic requirements of the AWA live-animal specification or the PVP standard.

Products must come from steer or heifer carcasses graded U.S. Prime and display marbling at “Moderately Abundant 00” or higher.

Labeling must follow USDA/FSIS requirements for certified beef programs.
